1 10 oz. (6 lbs.) can California Cling Peach
halves, well drained
1 quart diced canned pineapple, drained
3 cups fresh orange segments, chopped
3 cups English cucumber, finely chopped
2 cups red onion, finely chopped
1- 1/2 cups fresh cilantro, finely
chopped
2/3 cup seeded jalapeño peppers, finely
chopped
2/3 cup fresh mint, finely chopped
2/3 cup lime juice
1/2 cup olive oil
salt and pepper to taste
Directions:
In a large bowl, gently combine all ingredients.
Cover and refrigerate 2 hours to allow flavors to blend. Serve chilled.
