each variety’s relationship with its pit (stone)—basically, the
ease with which the edible peach flesh pulls away from the pit. The fruit
of Freestone Peaches separates easily from the pit while Cling Peaches tend
to be a bit more attached. Cling Peaches are also known for how well they
retain their flavor and consistency, making them the leading variety of
commercially canned peaches. Another noticeable difference is that Freestone
Peaches often have touches of red in the flesh around the pit.</font></td>
