Created by Gary Jenanyan, acclaimed restaurant and recipe consultant and
Executive Chef of the Great Chefs Program at the Robert Mondavi Winery,
this recipe for Center Cut Pork Chops with Peach Teriyaki Glaze,
exemplifies the versatility of California Cling Peaches.
Inspired by his passion for California produce and his international experience,
Jenanyan called upon the Eastern philosophy of Yin/Yang to describe his
creation as an intuitive blending of flavors in an effort to achieve a perfectly
balanced dish. Peaches are sweet, soft and moistthese are Yin
qualities. In using peaches as the featured component of this dish, I needed
to complement these Yin qualities with Yang qualities. I therefore selected
ingredients that are distinctively salty and/or acidic the pork, garlic
and ginger have strong Yang qualities. Each ingredient contributes to the
whole, resulting in a perfect combination of flavor.
