Some say that good magicians never tell their secrets, but we love it when a good chef does! Gary Jenanyan, acclaimed restaurant and recipe consultant and Executive Chef of the Great Chefs Program at California's Robert Mondavi Winery, shares his secrets in creating the featured recipe.

Inspired by his passion for California produce and the versatility of canned California Cling Peaches, Jenanyan calls upon his international experience and the Eastern philosophy of Yin/Yang to describe his creation as an intuitive blending of flavors in an effort to achieve a perfectly balanced dish. "Peaches are sweet, soft and moist; these are Yin qualities. In using peaches as the featured component of this dish, I needed to complement these Yin qualities with Yang qualities. I therefore selected ingredients that are distinctively salty and/or acidic—the pork, garlic and ginger have strong Yang qualities. Each ingredient contributes to the whole, resulting in a perfect combination of flavor."
